12 Sweet & Savoury Vegan Breakfast Ideas
Have you ever woken up to a random fridge full of ingredients but just no idea what to make with it all? I've gathered up my 12 favourites to help inspire your morning cookery to rustle up the finest breakfast in no time.
1 - Baked Hash Browns with Smoked Baked Beans
Who doesn't love hash browns? Saturday mornings are my favourite time to eat a good breakfast. These hash browns are very easy to make and cheap too! I paired them up with some smokey baked beans using kidney beans and a simple coleslaw using spring onions and coconut yoghurt. Hash browns can also be served with avocado and salsa or as part of a (vegan) 'Full English'

2 - Sourdough with Pairs and a Sweet Surprise
I often eat this in the autumn time when the weather is not so steamy as I love to have a cup of hot chocolate with it - it works so well with the pears! In summer I replace this with vegan chocolate milk or just some good old pressed apple juice.
Gail's Bakery have such a great sourdough selection which I pick up from my local Waitrose store close to my house. This one was a cherry sourdough which had a lovely sweetness which I topped with the pear slices and finally added on the most delicious salted maple walnuts which are so easy to make! Just a hot pan, tiny amount of oil and a good drizzle of maple syrup and a sprinkling of good sea salt. So good!
You can also make a great salted walnut brittle if you let it sit in a glass dish until it hardens. A little naughty but very nice snack! You can check out the 'making of' video on my Instagram stories called 'Quick Ideas' to see how it's done!
3 - Cucumber Bagels
Cucumber, cream cheese and black pepper bagel. It may sounds simple but I assure you - if you haven't tried this combination, you are in for a treat! It's one of my favourite breakfasts to make when the cupboards are empty and I want a tasty breakfast.
Definitely one to try on a hot summer day to get your water intake up while eating a delicious and filling breakfast.
4 -Vietnemese Rice Paper Rolls
If you're looking for a healthy breakfast that isn't a smoothie bowl or porridge, this is something fun to do, but not a great idea if you're in a hurry! The rice paper rolls are not easy to use at first so you will need some practice (mine are far from perfect!). You can fill them with anything either sweet or savoury.
I opted for mango, cucumber and peanuts and drizzled pomegranate molasses on top (leave this out if you don't want the extra calories) and basil leaves which it so tasty with the other ingredients!
5 - Lazy Breakfast Skillet
When you want a good feed or have guest staying and can't stand over the cooker as you want to entertain them, this is the one for you. I added a drizzle of olive oil into the bottom of a skillet pan and topped with sliced potatoes, chopped onion, cherry tomatoes, red and yellow peppers, mushrooms, asparagus and veggie sausages and placed it on the hob with the lid on until there was sizzling, I then placed it under the grill to cook the top of it.
When everything is soft and golden on the top remove it and let it rest while you make some toast. Serve it on the table with a stack of toast for a good feed for 3-4 people.
There will be a lovely sauce at the bottom of the pan for dipping toast into - or drizzle this over your toast! So good!
6 - Fresh Green Energy Breakfast Salad
This green breakfast salad is perfect if carbs for breakfast are not on the agenda and you're looking for some green goodness to get your energy levels up after a workout or before a busy day. Pick out your favourite green and slice them up nice and thin and arrange on your plate.
I sprinkled pistachios on top and swirled some wheatgrass powder through coconut yoghurt to have on the side. In this salad I used green grapes, kiwi, cucumber, apple and lemon.
7 - Tofu Scramble with a Special Ingredient!
Tofu scramble is a firm favourite of mine. Going vegan doesn't mean you don't miss the things you once ate, it means that you don't eat them for either ethical or health reasons, not because you don't enjoy the taste!

8 - Nectarine Toast with Strawberry Cream Sauce
This is a very similar idea as my pairs but after adding the almond butter to wholewheat toast, I grilled it to soften the nectarines. If you want, you can add a little sugar to the top to caremalise them, but as far as taste goes, you don't need it.
I blended the leftover pulp with 2 strawberries and coconut yoghurt which I dipped the toast in while eating and also dry fried some cashews in black pepper and sprinkled the over the top for a bit of crunch. Basil is garnish but tasted lovely with it too!
9 - Grilled Cream Cheese Stuffed Portobello Mushrooms
My husband LOVES this so I tend to make it often and this was his first trial of vegan cream cheese and let's just say that any apprehension he had disappeared as soon as he bit into the stuffed mushrooms.
To make this easy recipe shred up prick some holes in the mushroom and grill it on foil or an ovenproof dish to allow the liquid to drain out. Add in some shredded shallots or onions to the bottom and continue to grill on a low setting. Remove the mushrooms and fill with cream cheese and top with breadcrumbs. Place under the grill and grill until the breadcrumbs have browned.
This is a great breakfast indeed, but also a winning starter too if you're looking for something easy but impressive!
10 - Almond Butter & Banana Toast and Something Sweet
Looking for an easy breakfast that is healthy and filling? Try this easy peasy idea. Toast, nut butter (almond, peanut or any other works great), sliced banana and coconut nectar honey. So tasty!
11 - Avocado & Tomato Spiral with a Savoury Centre
Don't be daunted by the spiral, it's fun to make but you can eat this simply sliced up. I filled the centre with hummous and topped with vegan mozarella and a drizzle of balsamic glaze. I ate this with a gluten free tortilla
12 - Bagels with Poached Rhubard and a Biscoff Treat
My latest breakfast creation came from rhubarb I picked up in season from my local fruit and veg shop. I toasted the bagels and mixed together vegan cream cheese with crushed Biscoff Biscuits.
I poached the rhubarb in vanilla, sugar, water and ginger and put it on top of the cream cheese and mixed coconut yoghurt with the leftover liquid and drizzled it over and added chrystalised ginger and dried raspberries.
Ok, this one was a real challenge, but the result was so worth it. I am going to develop a recipe from this so watch this space!
